- 1 pound ground beef (or ground turkey)
- 1 packet taco seasoning
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup corn (canned or frozen)
- 1 whole avocado, diced
- 1 cup Doritos (taco flavor)
- ½ cup ranch dressing (or your favorite dressing)
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain any excess fat.
- Add the taco seasoning to the meat, following package instructions to include water and let simmer for a few minutes.
- Chop the romaine lettuce and place it in a large salad bowl.
- Add the cherry tomatoes, corn, diced avocado, and shredded cheese to the lettuce in the bowl.
- Once the ground beef is cooked and seasoned, add it to the salad bowl and gently mix all the ingredients together.
- Just before serving, sprinkle the Doritos over the salad to maintain their crunch.
- Drizzle ranch dressing over the top, toss if desired, and serve immediately.
Notes
For a healthier version, use lean ground turkey and reduce the cheese or dressing. You can also substitute Greek yogurt for ranch dressing.
