Instructions
- Combine the cooked rice (or cauliflower rice) with the black beans, corn, diced tomatoes, and taco seasoning in a large bowl. Mix well.
- Assemble the taco bowl by layering the mixture in a bowl.
- Top with diced avocado, shredded lettuce, and cheese if desired.
- Serve with a dollop of sour cream or Greek yogurt, a sprinkle of fresh cilantro, and lime wedges on the side.
