A fun and delicious twist on traditional pasta, combining penne, savory ground beef, and creamy queso cheese dip.

- 16 ounces penne pasta
- 2 tablespoons olive oil
- 1 pound ground beef (80/20 blend)
- ½ medium yellow onion, diced
- 2 bell peppers, diced (any color)
- 1 packet taco seasoning
- 16 ounces queso cheese dip
- 10 ounces diced tomatoes with green chiles, drained
Instructions
- Cook 16 ounces of penne pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining. Set the pasta aside.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add 1 pound of ground beef and cook until browned, breaking it up with a spoon. Drain excess grease.
- Add ½ medium diced yellow onion and 2 diced bell peppers to the skillet with the ground beef. Sauté for 5-7 minutes until softened.
- Sprinkle 1 packet of taco seasoning over the beef and vegetable mixture. Stir well and cook for another 1-2 minutes until fragrant.
- Pour in 16 ounces of queso cheese dip and stir until melted and smooth. If needed, add reserved pasta water a tablespoon at a time to reach the desired consistency.
- Stir in 10 ounces of drained diced tomatoes with green chiles. Add the cooked penne pasta to the skillet and toss until well coated in the sauce. Cook for an additional 2-3 minutes over low heat, stirring occasionally.
- Serve immediately and enjoy your delicious Taco Pasta!
Notes
Customize spice levels and add extra vegetables as preferred. Can be served with tortilla chips or a fresh salad.
