Instructions

  1. Start by gathering your ingredients and a medium saucepan. Combine the chopped rhubarb, 1/2 cup of sugar, and 2 tablespoons of water.
  2. Place the saucepan over medium heat and allow the mixture to simmer. Stir occasionally until the rhubarb becomes tender. This usually takes about 5 to 7 minutes.
  3. Once the rhubarb is tender, remove the saucepan from the heat. Stir in the lemon juice and vanilla extract. Let this mixture cool slightly while you prepare the gelatin.
