Description

A sweet and tangy jam made from fresh passion fruit, perfect for spreading on toast or gifting.


Ingredients

Scale
  • 2 cups passion fruit pulp, strained or with seeds
  • 1 and 1/2 to 2 cups sugar, to taste
  • 2 tablespoons lemon juice, fresh
  • Optional: 1 packet powdered pectin or 3 tablespoons liquid pectin
  • Optional: 1 teaspoon vanilla or a pinch of salt to round the flavor

Instructions

  1. Wash the jars and lids in hot soapy water, rinse well, and keep them warm in a low oven or pot of hot water.
  2. Add the passion fruit pulp and lemon juice to a pot; if you prefer a smooth jam, strain out most of the seeds.
  3. Warm the mixture on medium heat.
  4. Stir in sugar; for a firm set, whisk in powdered pectin and bring to a lively simmer (if using liquid pectin, simmer the fruit and sugar first, then add liquid pectin at the end).
  5. Keep it at a gentle bubble, stirring often until it thickens; check the set by placing a spoonful on a cold plate.
  6. Remove from heat and stir in optional vanilla or salt, then ladle into warm jars.
  7. Wipe rims and add lids; process jars in boiling water for 10 minutes for pantry storage, or let cool and refrigerate for fridge jam.

Notes

For a soft-set jam, use less sugar and skip the pectin.
