Ingredients

  • 1 pineapple
  • 2 bell peppers (any color, e.g., one red and one orange)
  • ½ cup soy sauce or coconut aminos
  • 2 tablespoons honey
  • 1 tablespoon olive oil, extra virgin
  • Âľ teaspoon salt
  • ½ teaspoon ground ginger
  • ½ teaspoon black pepper

Instructions

  1. Cut the chicken breasts into large chunks.
  2. In a Ziploc bag, add chicken and marinade ingredients: soy sauce, honey, olive oil, salt, ginger, and black pepper. Seal and mix well. Marinate for at least 1 hour in the fridge.
  3. Prepare the vegetables: cut bell peppers into chunks and pineapple into large pieces.
  4. Thread the marinated chicken, bell peppers, and pineapple onto skewers, alternating for a colorful look.
  5. Preheat grill to medium-high heat. Grill kabobs for 5–7 minutes on each side, flipping once, until chicken is cooked through.
  6. Serve hot, paired with sides like rice, quinoa, or a fresh salad.
