- 1½ – 2 pounds chicken breasts, boneless and skinless
- 1 pineapple
- 2 bell peppers (any color, e.g., one red and one orange)
- ½ cup soy sauce or coconut aminos
- 2 tablespoons honey
- 1 tablespoon olive oil, extra virgin
- Âľ teaspoon salt
- ½ teaspoon ground ginger
- ½ teaspoon black pepper
Instructions
- Cut the chicken breasts into large chunks.
- In a Ziploc bag, add chicken and marinade ingredients: soy sauce, honey, olive oil, salt, ginger, and black pepper. Seal and mix well. Marinate for at least 1 hour in the fridge.
- Prepare the vegetables: cut bell peppers into chunks and pineapple into large pieces.
- Thread the marinated chicken, bell peppers, and pineapple onto skewers, alternating for a colorful look.
- Preheat grill to medium-high heat. Grill kabobs for 5–7 minutes on each side, flipping once, until chicken is cooked through.
- Serve hot, paired with sides like rice, quinoa, or a fresh salad.
