Description

A flavorful twist on the traditional shepherd’s pie, this dish combines savory ground turkey with a creamy sweet potato topping.


Ingredients

  • 2 lb sweet potatoes, peeled and cut into 1-inch cubes
  • 4 tbsp olive oil
  • 1/2 cup milk
  • 2 tsp salt
  • 1 onion, diced into 1/2-inch pieces
  • 1 lb ground turkey
  • 3/4 tsp garlic powder
  • 1.5 tbsp Worcestershire sauce
  • 1 tsp poultry seasoning
  • 1 tbsp soy sauce
  • 12 oz frozen vegetables
  • 2 tbsp cornstarch
  • 1/2 cup broth
  • 1/4 tsp black pepper

Instructions

  1. Boil sweet potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and return to pot.
  2. Add 3 tablespoons of olive oil and 1/2 cup of milk to sweet potatoes and mash until smooth. Season with salt and set aside.
  3. In a skillet over medium heat, add 1 tablespoon of olive oil and diced onion. Cook until translucent, about 5 minutes.
  4. Add ground turkey and cook, stirring, until browned, about 6-8 minutes.
  5. Mix in garlic powder, salt, Worcestershire sauce, poultry seasoning, and soy sauce, stirring to combine.
  6. Stir in frozen vegetables and cook for another 5 minutes.
  7. In a bowl, whisk together milk, cornstarch, and broth until smooth. Pour into skillet and cook for 2-3 minutes until sauce thickens. Add black pepper to taste.
  8. Preheat oven to 400°F (200°C). Pour turkey mixture into a baking dish and spread mashed sweet potatoes on top.
  9. Bake for 25-30 minutes until sweet potato topping is slightly browned. Let cool before serving.

Notes

You can prepare this pie a day in advance. It also freezes well for up to 3 months.
