Ingredients

  • 1 large sweet potato, peeled and cubed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • ½ lb ground beef (or turkey/lentils for a vegetarian option)
  • 1 tbsp taco seasoning
  • ½ cup pico de gallo
  • ¼ cup guacamole
  • 2 tbsp sour cream (or dairy-free alternative)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the cubed sweet potato with olive oil, smoked paprika, salt, and pepper until well-coated.
  3. Spread in a single layer on a sheet pan and roast for 15 minutes.
  4. Flip and roast for another 10-15 minutes, until golden and tender.
  5. While sweet potatoes roast, heat a skillet over medium heat.
  6. Cook ground beef (or turkey/lentils) until browned, about 5-7 minutes.
  7. Add taco seasoning and 2 tablespoons of water, stirring for 2-3 minutes.
  8. Divide roasted sweet potatoes into bowls, top with ground meat, pico de gallo, guacamole, and sour cream. Garnish as desired.
