- 2 medium sweet potatoes, peeled and diced
- 1 pound ground beef
- 1 avocado, sliced
- 1 cup pico de gallo
- 1/2 cup sour cream or Greek yogurt
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 400°F (200°C). Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them evenly on a baking sheet. Roast for about 25-30 minutes or until they become golden and tender.
- Cook the ground beef in a skillet over medium heat. Add chili powder, cumin, salt, and pepper for flavor. Cook until the beef is browned and fully cooked.
- Assemble the taco bowl by layering roasted sweet potatoes at the bottom, followed by seasoned ground beef, sliced avocado, and pico de gallo. Drizzle with sour cream or Greek yogurt.
Notes
Make sure to roast the sweet potatoes until they are fully tender. Feel free to customize toppings as per taste.
