Description

A delicious and healthy meal made with roasted sweet potatoes, spiced ground beef, and fresh toppings.


Ingredients

  • 1 large sweet potato, peeled and cubed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • ½ lb ground beef (or substitute with ground turkey or lentils)
  • 1 tbsp taco seasoning (store-bought or homemade)
  • ½ cup pico de gallo
  • ¼ cup guacamole
  • 2 tbsp sour cream (or a dairy-free alternative)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the sweet potato cubes in a single layer on a baking sheet.
  4. Roast in the preheated oven for 15 minutes, then flip the sweet potatoes and roast for another 10-15 minutes until they are golden and tender.
  5. While the sweet potatoes are roasting, heat a skillet over medium heat.
  6. Add the ground beef and cook until it is browned and fully cooked through.
  7. Once the beef is cooked, add the taco seasoning and 2 tablespoons of water. Stir and let it simmer for about 2-3 minutes until the mixture thickens.
  8. In serving bowls, divide the roasted sweet potatoes evenly.
  9. On top of the sweet potatoes, spoon the seasoned beef mixture.
  10. Finish by adding pico de gallo, guacamole, and a dollop of sour cream. Garnish with cilantro, lime wedges, or crumbled cheese if desired.

Notes

Customize with different proteins or toppings as desired. Fresh pico de gallo and guacamole enhance the flavor.
