Description

A delightful blend of flavors and textures, these sweet potato rounds topped with goat cheese and cranberry balsamic glaze make a perfect appetizer or snack.


Ingredients

Scale
  • 2 large sweet potatoes, sliced into 1.5 cm rounds
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • 1/2 cup cranberry sauce (whole berry preferred)
  • 100g soft goat cheese, crumbled
  • 2 tbsp balsamic glaze
  • Fresh thyme sprigs for garnish
  • Cracked black pepper (optional)

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Line a tray with parchment paper and place the sweet potato slices in a single layer.
  3. Drizzle the sweet potatoes with olive oil, then season them generously with salt and pepper.
  4. Roast the sweet potatoes in the oven for 25–30 minutes, flipping them halfway through. They should be golden and tender when done.
  5. Once roasted, remove the tray from the oven and allow the sweet potatoes to cool slightly before topping them.
  6. Spoon a dollop of cranberry sauce on each round of sweet potato.
  7. Generously add crumbled goat cheese on top of the cranberry sauce.
  8. Drizzle balsamic glaze over each round for added flavor.
  9. Garnish with fresh thyme sprigs and serve warm or at room temperature.

Notes

Slice the sweet potatoes evenly to ensure uniform cooking. Avoid over-roasting to prevent burning. Let them cool slightly before topping.
