A delightful blend of flavors and textures, these sweet potato rounds topped with goat cheese and cranberry balsamic glaze make a perfect appetizer or snack.

- 2 large sweet potatoes, sliced into 1.5 cm rounds
- 1 tbsp olive oil
- Salt & pepper, to taste
- 1/2 cup cranberry sauce (whole berry preferred)
- 100g soft goat cheese, crumbled
- 2 tbsp balsamic glaze
- Fresh thyme sprigs for garnish
- Cracked black pepper (optional)
Instructions
- Preheat your oven to 200°C (390°F).
- Line a tray with parchment paper and place the sweet potato slices in a single layer.
- Drizzle the sweet potatoes with olive oil, then season them generously with salt and pepper.
- Roast the sweet potatoes in the oven for 25–30 minutes, flipping them halfway through. They should be golden and tender when done.
- Once roasted, remove the tray from the oven and allow the sweet potatoes to cool slightly before topping them.
- Spoon a dollop of cranberry sauce on each round of sweet potato.
- Generously add crumbled goat cheese on top of the cranberry sauce.
- Drizzle balsamic glaze over each round for added flavor.
- Garnish with fresh thyme sprigs and serve warm or at room temperature.
Notes
Slice the sweet potatoes evenly to ensure uniform cooking. Avoid over-roasting to prevent burning. Let them cool slightly before topping.
