Description

Delightful and healthy Sweet Potato Chickpea Nuggets, perfect for any occasion as a snack, side dish, or main course.


Ingredients

  • 2 sweet potatoes
  • 15 oz chickpeas (drained and rinsed)
  • 1 cup oat flour
  • 1/2 cup flax meal
  • 2 tsp paprika
  • 2 tsp Italian seasoning
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1.5 tsp pink sea salt
  • 1 tsp black pepper

Instructions

  1. Start prep work by lining a large baking sheet pan with parchment paper.
  2. Drain and rinse the chickpeas, then pat them dry.
  3. Peel the sweet potatoes and cut them into fourths.
  4. Place the sweet potatoes in a medium saucepan and fill it with enough water to cover them.
  5. Put the saucepan on the stovetop over high heat and bring it to a boil.
  6. Boil the sweet potatoes until they are soft and tender. Once ready, drain them and place them in the bowl of a food processor.
  7. Add the prepped chickpeas to the food processor along with the cooked sweet potatoes. Pulse on high for about 30-40 seconds until well combined.
  8. In a large mixing bowl, combine the oat flour and flax meal. Sprinkle in the spices: paprika, Italian seasoning, garlic powder, onion powder, pink sea salt, and black pepper. Whisk together.
  9. Fold the sweet potato and chickpea mixture into the dry ingredients. Mix until well combined.
  10. Cover the bowl with Saran Wrap and place it in the fridge for about 20-30 minutes.
  11. After chilling, preheat the oven to 400°F.
  12. Using a spoon, scoop out the mixture and shape it into nuggets about 3-4 inches long.
  13. Place the nuggets on the prepped sheet pan.
  14. Bake for 12-15 minutes and let them cool for about 10 minutes before serving.

Notes

Serve with BBQ sauce, ketchup, or your favorite dipping sauce for an enjoyable treat.
