Description

Ingredients

  • 4 large sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup mini marshmallows
  • 1/2 cup finely chopped pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the sweet potatoes in a large pot until they are tender. Drain and mash them well.
  3. In a mixing bowl, combine the mashed sweet potatoes, brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, and nutmeg. Mix everything together until smooth.
  4. Pour the sweet potato mixture into a greased baking dish and spread it evenly.
  5. Top the mixture with mini marshmallows and finely chopped pecans if using.
  6. Bake the casserole for 25-30 minutes, or until the marshmallows are golden brown.
