- 4 large sweet potatoes, peeled and cubed
- 1/2 cup brown sugar
- 1/2 cup milk
- 1/4 cup butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup mini marshmallows
- 1/2 cup finely chopped pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Boil the sweet potatoes in a large pot until they are tender. Drain and mash them well.
- In a mixing bowl, combine the mashed sweet potatoes, brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, and nutmeg. Mix everything together until smooth.
- Pour the sweet potato mixture into a greased baking dish and spread it evenly.
- Top the mixture with mini marshmallows and finely chopped pecans if using.
- Bake the casserole for 25-30 minutes, or until the marshmallows are golden brown.
- Serve warm as a delightful side dish for holiday meals.
