- 4 medium sweet potatoes (about 2 pounds)
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup milk
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup pecans, chopped
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/4 cup unsalted butter, softened
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- Peel the sweet potatoes and cut them into large chunks. Place them in a large pot and cover with water. Bring to a boil and cook until soft, about 15-20 minutes. Drain and let cool slightly.
- In a large mixing bowl, mash the sweet potatoes until smooth.
- Add granulated sugar, brown sugar, milk, softened butter, eggs, vanilla extract, ground cinnamon, ground nutmeg, and salt to the mashed sweet potatoes. Mix until combined and creamy.
- Pour the sweet potato mixture into a greased 9×13 inch baking dish and spread evenly.
- In a separate bowl, combine chopped pecans, flour, brown sugar, softened butter, and ground cinnamon. Mix until it resembles coarse crumbs.
- Sprinkle the streusel topping evenly over the sweet potato mixture.
- Bake in the preheated oven for 30-35 minutes, until the topping is golden brown and the casserole is heated through.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
Consider adding marshmallows for a sweeter twist or fruit for added flavor and texture.
