Ingredients

  • 4 medium sweet potatoes (about 2 pounds)
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup milk
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup pecans, chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel the sweet potatoes and cut them into large chunks. Place them in a large pot and cover with water. Bring to a boil and cook until soft, about 15-20 minutes. Drain and let cool slightly.
  3. In a large mixing bowl, mash the sweet potatoes until smooth.
  4. Add granulated sugar, brown sugar, milk, softened butter, eggs, vanilla extract, ground cinnamon, ground nutmeg, and salt to the mashed sweet potatoes. Mix until combined and creamy.
  5. Pour the sweet potato mixture into a greased 9×13 inch baking dish and spread evenly.
  6. In a separate bowl, combine chopped pecans, flour, brown sugar, softened butter, and ground cinnamon. Mix until it resembles coarse crumbs.
  7. Sprinkle the streusel topping evenly over the sweet potato mixture.
  8. Bake in the preheated oven for 30-35 minutes, until the topping is golden brown and the casserole is heated through.
  9. Remove from the oven and let it cool for a few minutes before serving.
