Description

A delicious Sweet Potato Casserole combining the natural sweetness of sweet potatoes with warm spices, perfect for holiday meals.


Ingredients

  • 4 cups sweet potatoes, cooked and mashed
  • 1/2 cup coconut milk or almond milk
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup pecans, chopped (optional)
  • 1/2 cup oat flour or gluten-free flour (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed sweet potatoes, coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
  3. If using, fold in the chopped pecans and oat flour for added texture.
  4. Transfer the mixture into a greased baking dish and spread it evenly.
  5. Bake in the preheated oven for about 25-30 minutes or until heated through and slightly golden on top.
