Ingredients

  • 4 medium apples (preferably tart varieties like Granny Smith)
  • 1 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • Chopped nuts for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Wash the apples thoroughly and remove the core with an apple corer, making sure not to break through the bottom.
  3. Combine the cream cheese, cheddar cheese, brown sugar, cinnamon, and vanilla extract in a mixing bowl until smooth.
  4. Stuff the cheese mixture into the hollowed apples, filling them to the top.
  5. Place the stuffed apples in a baking dish and cover them with aluminum foil.
  6. Bake for about 25-30 minutes, or until the apples are tender.
  7. If desired, sprinkle chopped nuts on top just before serving.
