Description

Delightful muffins filled with seasonal berries and a rich cream cheese base, perfect for breakfast or a snack.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (blueberries and raspberries)
  • For the crumb topping:
  • 1/4 cup sugar
  • 1/4 cup flour
  • 2 tablespoons butter
  • For the glaze:
  • 1/2 cup powdered sugar
  • 12 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners to prevent sticking.
  2. Combine the flour, sugar, baking powder, baking soda, and salt in a bowl to create your dry mix.
  3. Whisk together the melted butter, softened cream cheese, milk, eggs, and vanilla in another bowl until well blended.
  4. Slowly add the wet ingredients to the dry ingredients, stirring gently until just combined.
  5. Fold in the mixed berries gently to keep them intact.
  6. Spoon the batter into the lined muffin tin, filling each cup about three-quarters full.
  7. Mix the sugar, flour, and butter for the crumb topping in a bowl until crumbly, then sprinkle over the muffin batter.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Whisk together the powdered sugar, milk, and vanilla for the glaze until smooth, then drizzle over cooled muffins.

Notes

Use fresh berries for best results and avoid overmixing the batter.
