A delicious sugar-free pepper jam combining sweet red peppers and tangy apple cider vinegar for a versatile condiment.
Ingredients

- 2 cups of chopped sweet red peppers
- 1 cup of chopped green bell peppers
- 1/2 cup of apple cider vinegar
- 1 teaspoon of liquid pectin
- 1/4 cup of erythritol or another sugar substitute
- 1/2 teaspoon of salt
- 1/4 teaspoon of cayenne pepper (optional for heat)
Instructions
- In a saucepan, combine the chopped sweet and green bell peppers, apple cider vinegar, and salt.
- Bring the mixture to a boil over medium heat.
- Reduce heat and simmer for about 10 minutes until the peppers are tender.
- Stir in the erythritol and cayenne pepper (if using).
- Add the liquid pectin and stir well.
- Return to a boil and cook for another minute.
- Pour the mixture into sterilized jars while hot, seal, and let cool.
- Store in the refrigerator and use as desired.

Ensure to sterilize jars properly and consider freezing for long-term storage.
