Description

Delightful sugar cookie cups filled with a creamy strawberry cream cheese mixture, perfect for any occasion.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup strawberries, diced
  • 1 cup cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C). Grab a muffin tin and lightly grease the cups.
  2. Make the cookie dough: In a large mixing bowl, cream the butter and sugar until light and fluffy.
  3. Add the egg and vanilla: Mix in the egg and vanilla extract until well combined.
  4. Combine dry ingredients: Whisk together flour, baking powder, and salt; gradually add to the wet mixture.
  5. Shape the cookie cups: Press 2 tablespoons of dough into each muffin cup.
  6. Bake for 10-12 minutes or until edges are lightly golden. Let cool for 5 minutes in the tin, then remove and cool completely on a wire rack.
  7. Prepare the filling: Beat the cream cheese and powdered sugar until smooth; mix in the additional vanilla extract.
  8. Add strawberries: Fold in the diced strawberries into the cream cheese mixture.
  9. Fill the cookie cups: Fill each cooled cup with the strawberry cream cheese filling.
  10. Chill and serve: Let the filled cookie cups chill in the fridge for at least 30 minutes before serving.

Notes

Store in an airtight container in the refrigerator for 3-5 days. For best texture, store cookie cups and filling separately if not filled.
