Instructions
- Preheat the oven to 350°F (175°C). Grab a muffin tin and lightly grease the cups.
- Make the cookie dough: In a large mixing bowl, cream the butter and sugar until light and fluffy.
- Add the egg and vanilla: Mix in the egg and vanilla extract until well combined.
- Combine dry ingredients: Whisk together flour, baking powder, and salt; gradually add to the wet mixture.
- Shape the cookie cups: Press 2 tablespoons of dough into each muffin cup.
- Bake for 10-12 minutes or until edges are lightly golden. Let cool for 5 minutes in the tin, then remove and cool completely on a wire rack.
- Prepare the filling: Beat the cream cheese and powdered sugar until smooth; mix in the additional vanilla extract.
- Add strawberries: Fold in the diced strawberries into the cream cheese mixture.
- Fill the cookie cups: Fill each cooled cup with the strawberry cream cheese filling.
- Chill and serve: Let the filled cookie cups chill in the fridge for at least 30 minutes before serving.
