Ingredients

  • 1/2 cup edible cookie dough
  • 4 ounces white chocolate, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan to prevent the cheesecake from sticking.
  2. Prepare the cookie base: In a bowl, mix the flour, baking powder, and salt together. In another bowl, beat together the softened butter and 3/4 cup of sugar until creamy. Add the egg and 1 teaspoon of vanilla extract, then gradually mix in the dry ingredients. Once well combined, spread this mixture evenly in the bottom of the prepared pan.
  3. Bake the base: Place the pan in the preheated oven and bake for 10-12 minutes until it is lightly golden. Once done, let it cool to room temperature.
  4. Make the cheesecake filling: In a mixing bowl, beat the softened cream cheese and 1/2 cup of sugar until smooth and well blended. Stir in 1 teaspoon of vanilla extract and gently fold in the edible cookie dough.
  5. Combine the layers: Spread the cheesecake mixture on top of the cooled cookie base in the springform pan. Smooth it out with a spatula.
  6. Bake the cheesecake: Reduce the oven temperature to 325°F (160°C) and bake for 45-50 minutes, or until the cheesecake is set.
  7. Cool and chill: Once baked, let the cheesecake cool at room temperature for a while before transferring it to the refrigerator. Chill for at least 4 hours or overnight for the best flavor and texture.
  8. Serve: Before serving, drizzle the melted white chocolate over the top.
