- 1/4 cup Brown Sugar
- 1/4 cup Ketchup
- 1/2 cup Pineapple Juice
- 3 cloves Minced Garlic
- 1 tablespoon Grated Ginger
- 1 tablespoon Sesame Oil
- 1/2 teaspoon Black Pepper
- 2 pounds Boneless Skinless Chicken Thighs
- 4 cups Mixed Vegetables
- 1/4 cup Green Onions
- 4 cups Cooked Rice
Instructions
- Make the Marinade: In a large bowl, mix the soy sauce, brown sugar, ketchup, pineapple juice, minced garlic, grated ginger, sesame oil, and black pepper. Stir well until the sugar dissolves.
- Marinate the Chicken: Add the boneless skinless chicken thighs to the marinade. Make sure they are well-coated. Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 60 minutes, or overnight for best results.
- Prep the Grill: Preheat the grill to medium-high heat. If you don’t have a grill, you can use a skillet or an oven.
- Grill the Chicken: Take the chicken out of the marinade and allow any excess marinade to drip off. Place the chicken on the grill and cook for about 6-7 minutes per side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
- Cook the Vegetables: While the chicken is grilling, heat a large skillet over medium heat. Add a splash of oil and toss in the mixed vegetables. Stir-fry until they are tender but still crisp.
- Serve: Once the chicken is done, let it rest for a few minutes before slicing it into strips. To serve, layer the cooked rice, followed by the vegetables, and top with the sliced chicken. Garnish with green onions if desired.
Notes
For maximum flavor, let the chicken marinate for at least an hour or overnight. Adjust the amount of black pepper and brown sugar to suit your taste.
