- 4 medium zucchinis
- 1 pound ground turkey
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis in half lengthwise and scoop out the insides to create boats.
- In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add ground turkey and cook until browned. Stir in diced tomatoes, Italian seasoning, salt, and pepper, and cook for another 5 minutes.
- Remove from heat and stir in half of the cheese.
- Fill each zucchini boat with the turkey mixture and place in a baking dish.
- Sprinkle the remaining cheese on top of the filled zucchinis.
- Cover with foil and bake for 25 minutes, then uncover and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Serve warm and enjoy!
