Description

Stuffed zucchini boats are a tasty and healthy dish filled with seasoned ground turkey and cheese, perfect for any meal.


Ingredients

Scale
  • 4 medium zucchinis
  • 1 pound ground turkey
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the insides to create boats.
  3. In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  4. Add ground turkey and cook until browned. Stir in diced tomatoes, Italian seasoning, salt, and pepper, and cook for another 5 minutes.
  5. Remove from heat and stir in half of the cheese.
  6. Fill each zucchini boat with the turkey mixture and place in a baking dish.
  7. Sprinkle the remaining cheese on top of the filled zucchinis.
  8. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 10 minutes until the cheese is bubbly and golden.
  9. Serve warm and enjoy!
