Description
Savory mushrooms stuffed with cheesy filling and topped with olives to look like eyeballs – perfect for Halloween.
Ingredients
16 large mushrooms
8 oz cream cheese, softened
½ cup cooked sausage or bacon
¼ cup Parmesan cheese
1 garlic clove, minced
1 tbsp parsley, chopped
¼ tsp salt
¼ tsp pepper
16 olives for pupils
Olive oil or cooking spray
Instructions
1. Preheat oven to 375°F (190°C).
2. Clean mushrooms and remove stems. Chop stems.
3. Mix stems with cream cheese, sausage, Parmesan, garlic, parsley, salt, and pepper.
4. Stuff mixture into mushroom caps.
5. Press an olive into each cap for a pupil.
6. Bake 20–25 minutes until golden.
7. Serve warm on spooky platter.
Notes
Substitute Parmesan with feta for variation.
Make vegetarian by skipping sausage and adding veggies.
Freeze unbaked mushrooms for up to 3 months.
