Description

Delicious and hearty stuffed bell peppers filled with savory ground beef or turkey, rice, tomatoes, and cheese.

  • 1 lb Ground Beef or Ground Turkey
  • 2 ¼ cups Uncooked White Rice, Cooked
  • 15 oz can Diced Tomatoes
  • 8 oz can Tomato Sauce
  • ¾ cup Finely Chopped Yellow Onion
  • 2 teaspoons Olive Oil
  • 1 cup Shredded Cheddar Cheese (¼ cup set aside for topping)
  • 2 teaspoons Italian Seasoning
  • 1 ½ teaspoons Minced Garlic
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper

Instructions

  1. Preheat the Oven: Start by preheating your oven to 375°F (190°C).
  2. Prepare the Bell Peppers: Take the bell peppers and slice the tops off. Carefully remove the seeds to create a hollow base for the stuffing.
  3. Cook the Meat: In a large skillet, warm the olive oil over medium heat. Add the ground meat and brown it for about 5-7 minutes.
  4. Add Vegetables and Seasoning: Once the meat is browned, add the finely chopped onions, minced garlic, garlic powder, salt, pepper, and Italian seasoning. Cook this mixture for another 2-3 minutes.
  5. Mix in Rice and Sauces: Stir in the cooked rice, diced tomatoes, and tomato sauce, simmer for about 5-7 minutes.
  6. Stuff the Peppers: Carefully stuff each prepared bell pepper with the meat and rice mixture.
  7. Arrange in Baking Dish: Place the stuffed peppers upright in a baking dish.
  8. Add Cheese: Top each pepper with shredded cheddar cheese, sprinkling the reserved ¼ cup on top.
  9. Cover and Bake: Cover with foil and bake for about 25 minutes.
  10. Final Bake: Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
  11. Serve: Let cool slightly and serve hot, garnished with extra cheese if desired.
