- 1 lb Ground Beef or Ground Turkey
- 2 ¼ cups Uncooked White Rice, Cooked
- 15 oz can Diced Tomatoes
- 8 oz can Tomato Sauce
- ¾ cup Finely Chopped Yellow Onion
- 2 teaspoons Olive Oil
- 1 cup Shredded Cheddar Cheese (¼ cup set aside for topping)
- 2 teaspoons Italian Seasoning
- 1 ½ teaspoons Minced Garlic
- ½ teaspoon Garlic Powder
- ½ teaspoon Salt
- ¼ teaspoon Pepper
Instructions
- Preheat the Oven: Start by preheating your oven to 375°F (190°C).
- Prepare the Bell Peppers: Take the bell peppers and slice the tops off. Carefully remove the seeds to create a hollow base for the stuffing.
- Cook the Meat: In a large skillet, warm the olive oil over medium heat. Add the ground meat and brown it for about 5-7 minutes.
- Add Vegetables and Seasoning: Once the meat is browned, add the finely chopped onions, minced garlic, garlic powder, salt, pepper, and Italian seasoning. Cook this mixture for another 2-3 minutes.
- Mix in Rice and Sauces: Stir in the cooked rice, diced tomatoes, and tomato sauce, simmer for about 5-7 minutes.
- Stuff the Peppers: Carefully stuff each prepared bell pepper with the meat and rice mixture.
- Arrange in Baking Dish: Place the stuffed peppers upright in a baking dish.
- Add Cheese: Top each pepper with shredded cheddar cheese, sprinkling the reserved ¼ cup on top.
- Cover and Bake: Cover with foil and bake for about 25 minutes.
- Final Bake: Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
- Serve: Let cool slightly and serve hot, garnished with extra cheese if desired.
