This street corn chicken rice bowl recipe combines grilled corn, juicy chicken, and a creamy lime sauce over rice. Quick to prep and packed with flavor.
Ingredients
2 cups cooked rice
1 1/2 cups cooked chicken (grilled or shredded)
1 cup grilled or roasted corn
1/3 cup sour cream or Greek yogurt
1/4 cup Cotija cheese (or feta)
1 tsp chili powder
1/2 tsp smoked paprika
Juice of 1 lime
Salt to taste
Fresh cilantro, green onions, and lime wedges (for garnish)
Instructions
1. Prepare rice and keep warm.
2. In a skillet, sauté corn until lightly charred.
3. Warm chicken if needed, then season with chili powder, paprika, and salt.
4. Mix sour cream, lime juice, and a pinch of salt to create the creamy sauce.
5. Assemble bowls: layer rice, chicken, corn, cheese, and drizzle sauce over top.
6. Garnish with cilantro, green onions, and lime.
