Description

A vibrant and flavorful bowl combining seasoned chicken, sweet street corn, creamy avocado, and fluffy rice.

Ingredients

Scale
  • 1 pound chicken breast, cut into bite-sized pieces
  • 2 cups cooked rice
  • 1 can Mexican-style street corn (or 2 cups fresh corn with crema)
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • Lime wedges for serving
  • Salt and pepper to taste

Instructions

  1. Cook the Chicken: In a skillet, heat olive oil over medium heat. Add the chicken pieces and sprinkle them with taco seasoning, salt, and pepper. Cook until the chicken is fully cooked and browned, about 6-8 minutes.
  2. Prepare the Corn: In a separate pot, heat the street corn according to package instructions. If using fresh corn, sauté it in a little olive oil until cooked.
  3. Assemble the Bowl: In serving bowls, layer the cooked rice, seasoned chicken, street corn, diced tomatoes, and avocado.
  4. Garnish and Serve: Top the bowls with chopped cilantro and serve with lime wedges on the side.

Notes

For a fun twist, consider adding tortilla chips or a light salad on the side.
