Instructions
- Make the Crumble Topping: In a medium bowl, combine 1/2 cup all-purpose flour, 1/4 cup granulated sugar, a pinch of salt, and 1 tablespoon of finely powdered freeze-dried strawberries. Cut in 3 tablespoons of cold unsalted butter until the mixture looks like coarse crumbs. Set aside.
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
- Cream the Butter and Sugar: In a large mixing bowl, cream together 1 cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy, about 2-3 minutes.
- Add Flavors: Beat in 1 teaspoon of vanilla extract and 1/2 teaspoon of strawberry emulsion or extract.
- Combine Dry Ingredients: In a separate bowl, whisk together 2 1/2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon fine sea salt, and 2 tablespoons of finely powdered freeze-dried strawberries.
- Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture and mix just until combined.
- Shape the Cookies: Spoon the cookie dough into your cookie press, pack it firmly, and press onto lined baking sheets.
- Add the Crumble Topping: Sprinkle the prepared crumble topping over each cookie and gently press it onto the dough.
- Bake: Bake in the preheated oven for 10-12 minutes until edges are golden brown.
- Cool the Cookies: Let the cookies cool on the sheets for 5 minutes, then transfer to a wire rack to cool completely.
