Ingredients

  • 3/4 cup all-purpose flour
  • 1 teaspoon vanilla extract

  • 4 large eggs
  • 1 teaspoon vanilla extract (for cheesecake filling)
  • 1 cup heavy cream, whipped
  • 1/2 cup powdered sugar
  • 8 ounces softened cream cheese
  • 2 tablespoons melted unsalted butter
  • 2 tablespoons strawberry gelatin mix
  • 1 cup golden Oreo cookies, crushed
  • Whipped cream
  • Fresh strawberries, cut up
  • A bit of strawberry sauce to pour on

Instructions

  1. Preheat oven to 350°F (175°C) and cover a 9×13 inch pan with parchment paper.
  2. In a large bowl, beat together sugar and eggs until light and fluffy. Add vanilla extract.
  3. Sift in salt, baking powder, and flour; gently stir until no dry material remains. Pour in milk and mix in chopped strawberries.
  4. Pour batter into the lined pan, smoothing it out, and bake for 10-12 minutes until it springs back when poked.
  5. While warm, roll the sponge cake with the parchment paper into a log shape and let it cool completely.
  6. Prepare cheesecake filling by beating cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream until thickened and fold into the cream cheese mixture.
  7. Once the cake has cooled, unroll and spread cheesecake filling evenly over the cake. Roll it back up gently and wrap in plastic wrap; chill for at least 2 hours.
  8. For the crumble, mix crushed Oreos, strawberry gelatin, and melted butter until chunky crumbs form.
  9. After chilling, spread a thin layer of cheesecake filling on the outside and sprinkle with crumble.
  10. Decorate with whipped cream, cut-up strawberries, and drizzle strawberry sauce. Slice and serve.

Be gentle when folding the whipped cream to maintain a light texture. Chill time is essential for flavor melding and setting.
