- 1 cup heavy cream, whipped
- 1/2 cup powdered sugar
- 8 ounces softened cream cheese
- 2 tablespoons melted unsalted butter
- 2 tablespoons strawberry gelatin mix
- 1 cup golden Oreo cookies, crushed
- Whipped cream
- Fresh strawberries, cut up
- A bit of strawberry sauce to pour on
Instructions
- Preheat oven to 350°F (175°C) and cover a 9×13 inch pan with parchment paper.
- In a large bowl, beat together sugar and eggs until light and fluffy. Add vanilla extract.
- Sift in salt, baking powder, and flour; gently stir until no dry material remains. Pour in milk and mix in chopped strawberries.
- Pour batter into the lined pan, smoothing it out, and bake for 10-12 minutes until it springs back when poked.
- While warm, roll the sponge cake with the parchment paper into a log shape and let it cool completely.
- Prepare cheesecake filling by beating cream cheese, powdered sugar, and vanilla until smooth. Whip heavy cream until thickened and fold into the cream cheese mixture.
- Once the cake has cooled, unroll and spread cheesecake filling evenly over the cake. Roll it back up gently and wrap in plastic wrap; chill for at least 2 hours.
- For the crumble, mix crushed Oreos, strawberry gelatin, and melted butter until chunky crumbs form.
- After chilling, spread a thin layer of cheesecake filling on the outside and sprinkle with crumble.
- Decorate with whipped cream, cut-up strawberries, and drizzle strawberry sauce. Slice and serve.
Notes
Be gentle when folding the whipped cream to maintain a light texture. Chill time is essential for flavor melding and setting.
