  • 1 cup buttermilk
  • 1 cup white granulated sugar (for frosting)
  • ¼ cup all-purpose flour (for frosting)
  • ¼ teaspoon salt (for frosting)
  • 1 ½ cups whole milk (for frosting)
  • 1 tablespoon lemon juice (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 5 ounces cream cheese
  • ½ cup unsalted butter, softened (for frosting)
  • 7 fresh strawberries, sliced thin

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and dust with flour.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a mixing bowl, beat softened butter until smooth. Add sugar and beat until fluffy (about 2 minutes).
  4. Add vegetable oil, egg yolks, vanilla extract, vinegar, and red food coloring. Mix well.
  5. Gradually stir in dry ingredients and buttermilk, mixing until just combined.
  6. In a separate bowl, beat egg whites until thick. Fold into the batter.
  7. Divide batter between the prepared pans. Bake for 30 to 35 minutes. Cool in pans for 10 to 20 minutes, then cool completely on a wire rack.
  8. For frosting, whisk sugar, flour, and salt in a saucepan. Gradually whisk in milk until smooth. Heat over medium, stirring until thickened. Chill for about 1 hour.
  9. Once cooled, beat in lemon juice and vanilla extract. Gradually add cream cheese, then beat in softened butter until fluffy.
  10. Assemble the cake: Spread frosting on the first layer, top with strawberries, add second layer, and frost the top and sides. Garnish with more strawberries if desired.
