- ¼ teaspoon salt (for frosting)
- 1 ½ cups whole milk (for frosting)
- 1 tablespoon lemon juice (for frosting)
- 1 teaspoon vanilla extract (for frosting)
- 5 ounces cream cheese
- ½ cup unsalted butter, softened (for frosting)
- 7 fresh strawberries, sliced thin
Instructions
- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and dust with flour.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
- In a mixing bowl, beat softened butter until smooth. Add sugar and beat until fluffy (about 2 minutes).
- Add vegetable oil, egg yolks, vanilla extract, vinegar, and red food coloring. Mix well.
- Gradually stir in dry ingredients and buttermilk, mixing until just combined.
- In a separate bowl, beat egg whites until thick. Fold into the batter.
- Divide batter between the prepared pans. Bake for 30 to 35 minutes. Cool in pans for 10 to 20 minutes, then cool completely on a wire rack.
- For frosting, whisk sugar, flour, and salt in a saucepan. Gradually whisk in milk until smooth. Heat over medium, stirring until thickened. Chill for about 1 hour.
- Once cooled, beat in lemon juice and vanilla extract. Gradually add cream cheese, then beat in softened butter until fluffy.
- Assemble the cake: Spread frosting on the first layer, top with strawberries, add second layer, and frost the top and sides. Garnish with more strawberries if desired.
