- ¾ cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup seedless strawberry jam
- 1 cup powdered sugar
- 1½ tablespoons milk
- ¼ teaspoon vanilla extract
- Rainbow sprinkles for garnish
Instructions
- Make the Dough: In a large bowl, beat softened butter and sugar until light and fluffy. Add the egg and vanilla extract and mix until smooth. In a separate bowl, whisk together flour, baking powder, and salt. Slowly add the dry ingredients to the wet, mixing just until combined. The dough should be soft but not sticky. Wrap and chill for at least 30 minutes.
- Shape and Fill: Preheat oven to 350°F (175°C). Roll the dough between two sheets of parchment to about ¼ inch thick. Use a rectangular or round cutter to create shapes. Place half on a parchment-lined baking sheet, spoon a teaspoon of jam into the center, and top with another dough piece. Press edges with a fork to seal.
- Bake to Perfection: Bake for 10 to 12 minutes until edges are pale golden. Let them rest on the pan for 5 minutes before transferring to a cooling rack.
- Frost and Decorate: Once cookies are completely cool, whisk powdered sugar, milk, and vanilla to form a smooth glaze. Spread evenly over each cookie and top with colorful sprinkles. Allow icing to set for at least 15 minutes before stacking or serving.
