Description

A delightful dessert combining sponge cake with rich custard and fresh strawberries.


Ingredients

Scale
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 4 large eggs (room temperature)
  • 0.5 cup unsalted butter (melted)
  • 0.5 cup whole milk (room temperature)
  • 1.5 tsp baking powder
  • 2 tsp vanilla extract
  • 0.25 tsp salt
  • 2 cups whole milk
  • 4 large egg yolks
  • 0.5 cup granulated sugar
  • 0.25 cup cornstarch
  • 2 tbsp unsalted butter
  • 1.5 tsp vanilla extract
  • 1 lb fresh strawberries (hulled and sliced)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine all-purpose flour, baking powder, and salt in a mixing bowl and set aside.
  3. Whisk together the eggs and sugar in another large bowl until light and fluffy.
  4. Gradually add the melted butter and whole milk, then stir in the vanilla extract.
  5. Fold the dry ingredients into the wet mixture until well combined.
  6. Pour the batter into a greased cake pan.
  7. Bake for about 25-30 minutes, or until a toothpick comes out clean.
  8. Cool the sponge cake in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. Heat the whole milk in a saucepan over medium heat until warm but not boiling.
  10. Whisk together the egg yolks, sugar, and cornstarch until smooth.
  11. Gradually add the warm milk to the egg mixture, whisking constantly.
  12. Transfer the mixture back to the saucepan and cook over medium heat until thickened (5-7 minutes).
  13. Remove from heat and stir in the butter and vanilla extract until smooth.
  14. Slice the sponge cake in half horizontally.
  15. Place one layer of sponge cake on a serving plate and spread a layer of custard over it.
  16. Add a layer of sliced strawberries on top of the custard.
  17. Top with the second layer of sponge cake and spread more custard on top.
  18. Garnish with the remaining strawberries.
  19. Chill in the refrigerator for at least 2 hours before serving.

Notes

Best served chilled. Pairs well with vanilla ice cream or whipped cream.
