Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine the graham cracker crumbs and melted butter in a mixing bowl. Press this mixture into the bottom of a springform pan to form the crust.
  3. Beat the cream cheese and sugar together until smooth in another bowl.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract and sour cream until well combined.
  6. Fold in the pureed strawberries gently to mix.
  7. Pour the cheesecake filling over the crust in the springform pan.
  8. Bake for about 55-60 minutes until the center is set but still slightly jiggly.
  9. Cool to room temperature, then refrigerate for at least 4 hours or overnight to firm up.
  10. Top with strawberry cookie crumble before serving.
