Ingredients

- 1 cup glutinous rice flour
- 1/4 cup sugar
- 1/2 cup water
- 1/2 cup strawberry puree
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- Cornstarch or potato starch for dusting
Instructions
- In a mixing bowl, combine the glutinous rice flour and sugar.
- Gradually add water to the dry mixture while stirring until you achieve a smooth batter.
- Pour the mixture into a steaming pan or a heatproof dish.
- Steam for about 20 minutes until it becomes translucent.
- While the mochi is steaming, whip the heavy cream with powdered sugar until soft peaks form.
- Fold in the strawberry puree into the whipped cream gently.
- Once the mochi is done, dust a clean surface with cornstarch.
- Transfer the steamed mochi onto the dusted surface and cut it into squares.
- Place a spoonful of strawberry cream in the center of each square and fold the mochi over the filling.
- Dust the squares with more cornstarch to prevent sticking.
- Serve immediately or refrigerate for later enjoyment.

Store leftovers in an airtight container. Dust with cornstarch to prevent sticking if refrigerating.
