- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup whipped cream
- 1 cup fresh strawberries, pureed
- 1/4 cup powdered sugar (for sweetening whipped cream)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and granulated sugar until the mixture is light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Whisk together the all-purpose flour, baking soda, and salt in another bowl.
- Add the dry ingredients to the wet mixture until well combined.
- Drop tablespoonfuls of dough onto ungreased baking sheets, spacing them a couple of inches apart.
- Bake the cookies for about 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool completely on a wire rack.
- Mix the whipped cream with powdered sugar and pureed strawberries until well combined.
- Spread a layer of the strawberry cream on one cookie and top with another to make a sandwich.
Notes
Chill the dough for about 30 minutes before baking to prevent excessive spreading.
