Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup whipped cream
  • 1 cup fresh strawberries, pureed
  • 1/4 cup powdered sugar (for sweetening whipped cream)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and granulated sugar until the mixture is light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the all-purpose flour, baking soda, and salt in another bowl.
  5. Add the dry ingredients to the wet mixture until well combined.
  6. Drop tablespoonfuls of dough onto ungreased baking sheets, spacing them a couple of inches apart.
  7. Bake the cookies for about 10-12 minutes or until the edges are lightly golden.
  8. Let the cookies cool completely on a wire rack.
  9. Mix the whipped cream with powdered sugar and pureed strawberries until well combined.
  10. Spread a layer of the strawberry cream on one cookie and top with another to make a sandwich.
