Description

Delicious waffles filled with a rich cheesecake and fresh strawberry mixture, perfect for breakfast or brunch.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup buttermilk (or 1 cup milk mixed with 1 teaspoon vinegar)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • Cooking spray or additional melted butter for the waffle iron

Instructions

  1. Preheat your waffle iron according to manufacturer’s instructions. Lightly grease with cooking spray or melted butter.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the buttermilk (or milk and vinegar), egg, and melted butter until smooth.
  4. Gently fold the wet ingredients into the dry mixture until just combined, being careful not to overmix.
  5. In a medium bowl, blend the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  6. Fold in the chopped strawberries into the cream cheese mixture.
  7. Pour enough waffle batter into the preheated waffle iron to cover the bottom.
  8. Spoon a generous tablespoon of the cheesecake filling onto the center of the batter.
  9. Cover the filling with additional waffle batter.
  10. Close the waffle iron and cook according to manufacturer’s instructions, until golden and crisp (about 3–5 minutes).
  11. Transfer cooked waffles to a wire rack. Repeat the process with remaining batter and filling. Serve warm topped with maple syrup or whipped cream.

Notes

For best results, avoid overmixing the batter and use fresh ingredients.
