- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup milk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 cup strawberry compote
- Oil for frying
- Sugar for coating
Instructions
- In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon. Ensure there are no lumps in the dry mixture.
- In another bowl, mix the milk, eggs, melted butter, and vanilla extract until well blended.
- Slowly pour the wet mixture into the dry ingredients. Stir gently until just mixed. Do not overmix; it’s okay if there are a few lumps.
- Heat oil in a fryer or large pot over medium heat. Test if the oil is ready by dropping a small amount of batter into it; if it bubbles and rises, the oil is good to go.
- Drop spoonfuls of batter into the hot oil, frying a few at a time. Fry until golden brown, about 2-3 minutes per side. Adjust the heat if they are browning too quickly.
- Remove the donuts from the oil and drain them on paper towels to remove excess oil.
- In a separate bowl, mix the softened cream cheese and powdered sugar until smooth and creamy.
- Once the donuts are cool enough to handle, inject each donut with the cheesecake filling using a pastry bag or a syringe. Make sure to fill them well!
- Drizzle with strawberry compote and roll them in sugar before serving.
