Description

Soft, fluffy donuts filled with a rich cheesecake mixture and topped with sweet strawberry compote.


Ingredients

  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup strawberry compote
  • Oil for frying
  • Sugar for coating

Instructions

  1. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon. Ensure there are no lumps in the dry mixture.
  2. In another bowl, mix the milk, eggs, melted butter, and vanilla extract until well blended.
  3. Slowly pour the wet mixture into the dry ingredients. Stir gently until just mixed. Do not overmix; it’s okay if there are a few lumps.
  4. Heat oil in a fryer or large pot over medium heat. Test if the oil is ready by dropping a small amount of batter into it; if it bubbles and rises, the oil is good to go.
  5. Drop spoonfuls of batter into the hot oil, frying a few at a time. Fry until golden brown, about 2-3 minutes per side. Adjust the heat if they are browning too quickly.
  6. Remove the donuts from the oil and drain them on paper towels to remove excess oil.
  7. In a separate bowl, mix the softened cream cheese and powdered sugar until smooth and creamy.
  8. Once the donuts are cool enough to handle, inject each donut with the cheesecake filling using a pastry bag or a syringe. Make sure to fill them well!
  9. Drizzle with strawberry compote and roll them in sugar before serving.
