Ingredients

  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped fresh strawberries
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, sugar, and brown sugar until smooth.
  3. Beat in the eggs and vanilla extract until well combined.
  4. Whisk together the all-purpose flour, baking soda, and salt in another bowl.
  5. Add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped strawberries.
  7. Mix softened cream cheese with powdered sugar until smooth in a separate bowl.
  8. Take a portion of cookie dough, flatten it, add a teaspoon of cream cheese mixture in the center, and wrap dough around it to form a ball.
  9. Place cookies on a baking sheet lined with parchment paper.
  10. Bake for 12-15 minutes or until golden brown on the edges.
  11. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
