- 4 large flour tortillas
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup diced fresh strawberries
- 1/2 teaspoon ground cinnamon
- 1/4 cup granulated sugar
- Oil for frying
Instructions
- In a mixing bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth.
- Fold in the diced strawberries gently to combine.
- Place a few tablespoons of the cheesecake filling in the center of each tortilla.
- Fold in the sides of each tortilla and roll it up tightly to secure the filling.
- Heat oil in a deep frying pan over medium heat until hot.
- Carefully add the chimichangas to the hot oil, frying them until golden brown on all sides.
- Remove the chimichangas from the oil and place them on paper towels to drain excess oil.
- In a small bowl, mix the granulated sugar and ground cinnamon together.
- While the chimichangas are still warm, dust them with the cinnamon sugar mixture.
- Serve immediately and enjoy.
Notes
