Description

Delicious Strawberry Cheesecake Chimichangas combining rich creaminess with a crispy texture.


Ingredients

  • 4 large flour tortillas
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh strawberries
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • Oil for frying

Instructions

  1. In a mixing bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Fold in the diced strawberries gently to combine.
  3. Place a few tablespoons of the cheesecake filling in the center of each tortilla.
  4. Fold in the sides of each tortilla and roll it up tightly to secure the filling.
  5. Heat oil in a deep frying pan over medium heat until hot.
  6. Carefully add the chimichangas to the hot oil, frying them until golden brown on all sides.
  7. Remove the chimichangas from the oil and place them on paper towels to drain excess oil.
  8. In a small bowl, mix the granulated sugar and ground cinnamon together.
  9. While the chimichangas are still warm, dust them with the cinnamon sugar mixture.
  10. Serve immediately and enjoy.
