- 1 lb ground beef
- 8 oz rotini pasta
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 3/4 cup heavy cream
- 1 1/2 cups shredded cheddar cheese
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped parsley (optional)
Instructions
- Heat a large skillet over medium heat, add the ground beef, and cook until browned for 5-7 minutes. Drain excess fat.
- Add diced onion and cook for 3-4 minutes until soft, then add minced garlic and stir for an additional 30 seconds to 1 minute.
- Sprinkle in paprika, salt, and black pepper, stirring well.
- Pour in beef broth, bring to a simmer, and add rotini pasta. Cover and simmer on low for 10-12 minutes, stirring occasionally.
- Add heavy cream and shredded cheddar cheese, stirring until melted and creamy.
- Taste and adjust seasoning if necessary. Serve hot.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat with a splash of beef broth or cream.
