- 1 pound lean ground beef
- 8 ounces penne or fusilli pasta
- 1 cup heavy cream (or half-and-half)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup low-sodium vegetable broth
- 1 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large skillet over medium heat, heat the olive oil. Add the diced onion and sauté until it becomes translucent, about 5 minutes.
- Add the minced garlic and cook for another minute, stirring occasionally.
- Introduce the ground beef to the skillet. Cook until browned, about 6-8 minutes, seasoning with salt and pepper.
- In a separate pot, boil salted water and cook the pasta according to package instructions until al dente. Drain and set aside.
- Pour the vegetable broth into the skillet with the cooked beef. Stir in the heavy cream and let it simmer for about 3 minutes until the sauce slightly thickens.
- Stir in the grated Parmesan cheese until it melts and forms a creamy sauce.
- Combine the cooked pasta with the sauce in the skillet, stirring gently to coat the pasta evenly.
- Taste and adjust the seasoning if necessary. Serve immediately, topped with extra Parmesan if desired.
Notes
Leftovers can be stored in an airtight container for up to 3 days. Reheat in a skillet with a splash of milk or broth to loosen the sauce.
