- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 cup vegetable broth
- 1 cup milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer until the broccoli is tender, about 10 minutes.
- Stir in the milk and cheddar cheese, cooking until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
- Serve warm.
