Description

Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup vegetable broth
  • 1 cup milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the broccoli florets and vegetable broth. Bring to a boil, then reduce heat and simmer until the broccoli is tender, about 10 minutes.
  3. Stir in the milk and cheddar cheese, cooking until the cheese is melted and the soup is heated through.
