Description
This stoved chicken recipe is a hearty one-pot dinner made with chicken, potatoes, bacon, and onions—perfect for cozy evenings.
Ingredients
4 chicken thighs (bone-in, skin-on)
4 slices bacon, chopped
4 medium potatoes, peeled and sliced
2 onions, sliced
2 carrots, chopped
2 cups chicken stock
2 tbsp olive oil
1 tsp dried thyme
Salt and pepper, to taste
Instructions
1. Heat oil in a large pot over medium heat. Brown chicken on both sides; remove and set aside.
2. Add bacon to the pot and cook until crisp.
3. Add onions and carrots; cook 3–4 minutes until softened.
4. Layer potatoes over vegetables.
5. Place chicken on top; sprinkle with thyme, salt, and pepper.
6. Pour chicken stock over everything.
7. Cover and simmer on low for 45–50 minutes, until chicken is tender and potatoes are cooked through.
8. Serve hot.
Notes
Swap potatoes for sweet potatoes or add seasonal vegetables.
For less fat, use skinless chicken thighs.
Store leftovers in an airtight container for up to 3 days or freeze for 2 months.
