- 2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 4 (8-ounce) packages cream cheese, softened
- 1 cup powdered sugar
- 1 cup Baileys Irish Cream
- 2 eggs
- 1 teaspoon vanilla extract
- 1 tablespoon espresso powder
- Whipped cream for topping
- Chocolate shavings for garnish
Instructions
- Preheat the oven to 325°F (163°C).
- Combine the graham cracker crumbs, sugar, and melted butter in a bowl. Mix well and press the mixture into the bottom of a 9-inch springform pan.
- Beat the cream cheese and powdered sugar together in a large mixing bowl until smooth.
- Add the Baileys Irish Cream, eggs, vanilla extract, and espresso powder. Mix until everything is well combined.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set.
- Allow the cheesecake to cool to room temperature. Then refrigerate for at least 4 hours or overnight for the best texture.
- Serve topped with whipped cream and chocolate shavings.
Notes
For the best texture, refrigerate overnight. Customize the cheesecake by using crushed Oreos for the crust or add chocolate chips to the batter.
