Ingredients
- Rice paper wrappers
- Rice noodles
- Carrots

Instructions
- Prepare the rice noodles according to the package instructions and set aside.
- Julienne the carrots, cucumbers, and bell peppers.
- Soak the rice paper wrappers in warm water until soft.
- Lay a soaked wrapper on a flat surface and layer some rice noodles and assorted vegetables on top.
- Roll tightly like a burrito, tucking in the sides as you go.
- Repeat with the remaining wrappers and fillings.
- Arrange the rolls on a plate and drizzle with peanut dressing.
- Garnish with fresh cilantro, chopped peanuts, and lime wedges.
- Serve immediately or chill until ready to serve.
Notes
