Description

A quick and nutritious power bowl made with fresh spinach and white beans, perfect for a healthy meal.


Ingredients

  • 2 cups fresh spinach
  • 1 can white beans (cannellini or navy beans), drained and rinsed
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional toppings: lemon juice, red pepper flakes, or grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. Stir in the drained white beans and cook for another 2-3 minutes to heat through.
  5. Season with salt and pepper to taste.
  6. Remove from heat and serve warm, with optional toppings if desired.
