Description

Delicious and healthy spinach and feta quesadillas, perfect for a quick meal or snack.


Ingredients

Scale
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 4 flour tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: sliced olives, diced tomatoes, or red onion

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the fresh spinach and sauté until it wilts, about 2 minutes.
  3. Remove from heat and mix in the crumbled feta cheese. Add salt and pepper to taste.
  4. Place one tortilla in the skillet. On one half, add the spinach-feta mixture.
  5. Fold the tortilla over to create a half-moon shape.
  6. Cook for 2-3 minutes on each side until golden brown and crispy.
  7. Repeat with remaining tortillas and filling.
  8. Serve warm, optionally with salsa or guacamole.

Notes

Let cool and store in an airtight container in the fridge for 2-3 days. Reheat in a skillet or microwave.
