Delicious and healthy spinach and feta quesadillas, perfect for a quick meal or snack.
Ingredients

- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 4 flour tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: sliced olives, diced tomatoes, or red onion
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the fresh spinach and sauté until it wilts, about 2 minutes.
- Remove from heat and mix in the crumbled feta cheese. Add salt and pepper to taste.
- Place one tortilla in the skillet. On one half, add the spinach-feta mixture.
- Fold the tortilla over to create a half-moon shape.
- Cook for 2-3 minutes on each side until golden brown and crispy.
- Repeat with remaining tortillas and filling.
- Serve warm, optionally with salsa or guacamole.
Notes
Let cool and store in an airtight container in the fridge for 2-3 days. Reheat in a skillet or microwave.
