- 1 Large onion (finely chopped)
- 1 large Red bell pepper (sliced into strips)
- 1 Small hot pepper (sliced)
- 4 Garlic cloves (minced)
- 4 tablespoons Olive oil
- 1 teaspoon Sweet paprika
- ½ teaspoon Hot paprika
- ½ teaspoon Turmeric
- ¼ teaspoon Ground cumin
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 4 Medium plum tomatoes (diced)
- 4 Large eggs
- ½ cup Fresh cilantro (chopped)
Instructions
- Heat the olive oil in a large skillet over medium heat until shimmering but not smoking.
- Add the finely chopped onion and cook until translucent, about 5 minutes.
- Add the sliced red bell pepper and hot pepper, cooking until softened, for another 3-5 minutes.
- Stir in the minced garlic, sweet paprika, hot paprika, turmeric, cumin, salt, and black pepper. Cook for 1-2 minutes until fragrant.
- Add the diced tomatoes to the skillet and let simmer for about 10 minutes, stirring occasionally.
- Crack the eggs into a bowl, whisk lightly, and pour into the skillet, gently stirring until the eggs are just set.
- Remove from heat and sprinkle with fresh cilantro. Serve warm.
