Ingredients

- 2 cups rhubarb, chopped
- 1 cup raisins
- 1 cup sugar
- 1/2 cup onion, finely chopped
- 1/2 cup apple cider vinegar
- 1 tablespoon ginger, grated
- 1 teaspoon mustard seeds
- 1/2 teaspoon red pepper flakes
- Salt to taste
Instructions
- Combine the rhubarb, raisins, sugar, onion, and apple cider vinegar in a saucepan.
- Bring to a boil over medium heat, then reduce to a simmer.
- Stir in the ginger, mustard seeds, red pepper flakes, and salt.
- Cook for about 30-40 minutes, stirring occasionally, until the chutney thickens.
- Allow to cool before serving and store in sterilized jars in the refrigerator.
