Description

A delightful combination of sweet and spicy flavors, this chutney is perfect for pairing with meats, cheeses, and as a spread.


Ingredients

  • 2 cups rhubarb, chopped
  • 1 cup raisins
  • 1 cup sugar
  • 1/2 cup onion, finely chopped
  • 1/2 cup apple cider vinegar
  • 1 tablespoon ginger, grated
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon red pepper flakes
  • Salt to taste

Instructions

  1. Combine the rhubarb, raisins, sugar, onion, and apple cider vinegar in a saucepan.
  2. Bring to a boil over medium heat, then reduce to a simmer.
  3. Stir in the ginger, mustard seeds, red pepper flakes, and salt.
  4. Cook for about 30-40 minutes, stirring occasionally, until the chutney thickens.
  5. Allow to cool before serving and store in sterilized jars in the refrigerator.
