Ingredients

- 4 chicken breasts
- 1/4 cup maple syrup
- 2 tablespoons soy sauce
- 1 tablespoon sriracha
- 1 tablespoon olive oil
- 1 cup rice
- 1 can coconut milk
- 1 cup water
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- In a bowl, mix together the maple syrup, soy sauce, and sriracha.
- Marinate the chicken breasts in this mixture for at least 30 minutes.
- Heat olive oil in a pan over medium heat. Add marinated chicken and cook until golden brown and fully cooked, about 5-7 minutes per side.
- In a separate saucepan, combine rice, coconut milk, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and let simmer until rice is cooked, about 15-20 minutes.
- Serve the chicken over the creamy coconut rice, garnished with chopped cilantro if desired.
Notes
Allow chicken to marinate longer for better flavor. Cooking times may vary based on chicken thickness.
