- 1 lb spicy Italian sausage
- 4 cloves garlic, minced
- ¼ cup honey
- ¼ cup soy sauce
- 1 bell pepper, sliced
- 1 cup cherry tomatoes, halved
- 2 cups spinach
- 2 tablespoons olive oil
- Salt and pepper to taste
- Grated Parmesan cheese (optional, for serving)
- Fresh basil (optional, for garnish)
Instructions
- Cook the penne pasta as per the package instructions until it’s al dente. Drain the pasta and set it aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat and brown the spicy Italian sausage for about 5-7 minutes until cooked through.
- Add minced garlic and a pinch of red pepper flakes to the skillet, cooking for about 1 minute until fragrant.
- Stir in honey and soy sauce, allowing to simmer for 2-3 minutes to thicken slightly.
- Add sliced bell pepper and halved cherry tomatoes, cooking for an additional 3-4 minutes until vegetables soften.
- Incorporate spinach and cooked penne pasta, tossing everything together until the spinach wilts down.
- Season with salt and pepper to taste. Serve warm, garnished with grated Parmesan cheese and fresh basil if desired.
Notes
Be cautious with salt as soy sauce and sausage add saltiness. Avoid overcooking the vegetables for the best texture.
